Penny was working as a fitness trainer when she was spotted by a scout for a modelling agency who suggested considering a career in modelling. After achieving success as a model, Penny took a photography course, and subsequently undertook work for magazines and newspapers. Penny turned her hand to acting in 2005, with her debut in the West End musical "Tonight's The Night".

Partnered with Ian Waite, Penny took part in series five of Strictly Come Dancing. Their first competitive dance on the show was a Quickstep, which the judges were very complimentary about with Arlene comparing her to Ginger Rogers, and they awarded the couple 33 points putting them joint top of the leaderboard with Kelly & Brendan. The next week they danced a Jive, but it wasn't a dance that suited Penny, and the judges score plummeted to only 25 points. The public voted saved them for another week, and their next dance was the Samba which the judges preferred and this was followed by a Foxtrot in week five putting them back up to second on the leaderboard. But, it was back to latin the following week, with a Salsa which was just not good enough for either the judges, scoring it only 25, or the public, and Penny & Ian found themselves in the bottom two dance-off against Matt & Flavia, and the judges voted three to one against Penny, and she finished the competition in ninth out of fourteen couples.
